EMPOWER consists of the biotech exploitation of insects for the generation of novel, cost-effective, sustainable and hypoallergenic bioactive protein hydrolysates and peptides. These will be obtained by different combinations of thermal processing and enzymatic hydrolysis to be further incorporated in new formulated foods with health-promoting properties, which will be validated by in vitro and in vivo assays.
