IMMUNOGATE will study the intricate interactions within the allergen gut barrier aiming at unraveling the impacts of food processing, digestibility, and absorption/transport phenomena on allergenicity mitigation with special focus on protein. By developing a comprehensive GUT model, this project aims to elucidate the complex dynamics involved in these processes and identify potential strategies for mitigating protein allergenicity. This modeling approach allows for a systematic exploration of how various factors influence allergen behavior from the point of food processing through digestion and absorption in the gut. Ultimately, the insights gained from this research will contribute to the development of targeted interventions for minimizing the adverse effects of food allergens, fostering advancements in food safety and public health.
